Courgette, Carrot and Halloumi Fritters

These homemade cheesy courgette fritters make an easy summer side or main dish. Great served with sour cream dip, Greek yoghurt, sweet chilli or a hot honey drizzle. On your table in under 30 minutes!

Ingredients

  • 1 courgette
  • 1 carrot
  • 200-225 g block halloumi cheese
  • 70 g self-raising flour
  • 1 tablespoon cornflour
  • 1 egg
  • oil for frying the fritters

Instructions

  • Start preparing the fritters by grating the courgette and adding the grated courgette to a bowl along with a generous pinch of salt. Allow it to sit while you prep the remaining ingredients.
  • Grate the carrot and add to a large mixing bowl. Now grate the block of halloumi and add that to the bowl.
  • Place the courgette in a clean tea towel and squeeze as much liquid out of it as possible. Add the courgette to the mixing bowl, along with the self-raising flour, cornflour and the egg. Season generously with black pepper and add any additional herbs or seasonings of your choice.
  • Mix really well until everything is combined fully. Heat a frying pan on a medium heat. Add a liberal amount of olive oil and allow that a few moments to heat up.
  • Spoon amounts of the fritter mix into the pan, using a spoon shape into a round patty shape, flattening the top ever slightly. This mix will make 8 fritters. Fry each fritter for a few minutes on each side, flipping over and cooking until each side is golden and crisp. Keep warm in the oven before serving.
  • Serve the fritters with a sprinkle of flaky sea salt, a squeeze of fresh lemon juice, and herbs to garnish.
