Easy Healthy Homemade Granola Recipe

Happy New Year everyone! I hope you all had a fabulous, fun-filled and delicious Christmas! After a long period of sheer indulgence and unforgettable feasting January see’s me attempt (and try very hard to) to get “back on track” with my healthy eating after consuming way too much chocolate & calories over the Christmas holidays (well who doesn’t?)! And this homemade granola recipe is definitely the perfect, healthy, nutritious and will set you up for a busy day ahead! This is my mum’s homemade recipe and my whole family really enjoy the taste. It’s full of all the good stuff and great paired with some amazing different toppings. This year why not ditch the sugar-laden unnatural shop-bought granola for this divine, tasty and easy to make recipe! Enjoy!

I can’t express enough my love for homemade granola. I really can’t get enough of the deliciously tasty oaty goodness. With just a handful of ingredients and so easy to make, this recipe will become your go-to breakfast. What I enjoy most about this homemade healthy granola is how versatile and adaptable the flavours are, I especially like to serve my bowl with lemon flavoured Greek yogurt and loads of fresh raspberries, blueberries and strawberries- that always makes a super scrumptious and berrylicious feast first thing in the morning!

My mum however really enjoys a chopped dates and extra walnuts. She enjoys the dates because they bring a tasty fudgy texture and count as one of your five-a-day. So as you can see you literally add and pop anything from your fridge, store-cupboard or fruit bowl to this batch. I love adding a small handful of chocolate chips to small portion of this granola, add some sliced banana coins and a good dollop of peanut butter – one of my favourites!

Ingredients –

(Makes approx. 12 generous servings – based on 45g serving)

350g rolled oats

50g oat bran

50g desiccated coconut

50g flaked almonds (added before cooking)

5 tbsp rapeseed oil

25g flaked almonds (added after cooking)

50g flaxseeds (also known as golden linseeds)

Additional servings – 

Fresh natural yogurt

Dates & chopped walnuts

Chia seeds

Method –

1. Preheat your oven to 180 degrees C Fan. Weigh out the rolled oats, oat bran, coconut, almonds and mix together to combine. Then mix through the rapeseed oil. Pour out onto 1 large baking tray and spread out evenly.

2. Bake for approx. 7 minutes, then check and turn the oats and put back in the oven to toast for another 5 minutes until golden. Once baked, allow to cool on tray out of the oven.

3. Once cooled, store in an airtight container for up to 3 weeks. Best served with berries and yogurt or with walnuts and chopped dates. ENJOY!
